Citrus Marinade
This all-purpose marinade will make grilled foods such as beef, pork or chicken sing with great flavor!

1/2 cup orange juice
1/4 cup soy sauce
1 clove garlic, crushed
2 dashes cloves, ground

Combine all ingredients and mix well.

Put the food to be marinated in a non-reactive dish: glass, ceramic, or plastic.

Pour the marinade over the meat or poultry of your choice. Cover the dish and refrigerate for up to 12 hours. Usually 3 or 4 hours is enough. Beef, lamb and pork do well marinating for a long time; chicken should not be left in the marinade for more than 6 to 8 hours. (Fish should never be marinated for longer than 2 hours or it will turn soft and "cottony.")

Lift the meat or poultry from the marinade and let any excess drip back into the pan. Do not store or reuse the marinade. If you want to use it for basting, only brush it over the meat during the first half of cooking -- never at the end. If you want to use it as a sauce, bring it to a boil and let it simmer briskly for about 5 minutes. This will kill any bacteria from the raw meat or poultry that may have seeped into the marinade.
