Chili Mustard Carrots

1/2 cup plain nonfat yogurt
2 teaspoons dry mustard, or 1 tablespoon prepared mustard, without added salt
1 tablespoon cider vinegar
2 teaspoons chili powder
2 teaspoons sugar
salt, if desired
fresh ground black pepper, if desired
3 medium carrots, about 8-ounces total, peeled
2 tablespoons fresh parsley, chopped
1/3 cup dried currants, or raisins
1/4 cup (1 oz.) chopped walnuts

In a large bowl whisk together the yogurt, mustard, vinegar, chili powder, sugar, and salt and pepper to taste. Grate the carrots, either with a food processor or by hand, and add to the bowl along with the parsley and currants or raisins. Toss to mix, then refrigerate for several hours, tossing occasionally. Before serving, add the walnuts and mix well.
