Just Wonderful Lemon-Garlic Chops
These pork chops truly live up to their name!

2/3 cup lemon juice
1/2 cup olive oil
3 to 4 tablespoons chopped garlic, or 1 jar (4 1/2 ozs.) minced garlic
2 tablespoons dried tarragon, crushed
paprika, to taste
Eight 1-inch-thick boneless pork chops

In a small bowl, whisk together the lemon juice, olive oil, garlic, and tarragon.

Put the pork chops in a 1-gallon zipped plastic bag and pour the marinade over them. Seal the bag and rotate several times to mix the marinade and chops well. Refrigerate for at least 6 hours and up to 12 hours.

Preheat the broiler.

Remove the chops from the plastic bag. Discard the marinade. Put the chops on rack and sprinkle with paprika. Position the rack 4 to 5 inches from the heat and broil for 10 minutes, or until browned. Turn chops, sprinkle with more paprika, and cook for 10 minutes more, or until chops are just done.

Serve hot.
