2 tablespoons almonds, sliced
1 cup millet
1 tablespoon Crisco® Vegetable Oil
1 small onion, chopped
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander
1 1/2 inch piece cinnamon stick
2 tablespoons raisins
1/2 teaspoon salt
2 cups boiling water
1/4 cup chopped parsley
freshly ground pepper

Toast the almonds in a medium-sized saucepan over medium heat for about 5 minutes until they are fragrant and lightly browned. Remove from the pan and set aside.

Toast the millet in the same pan over medium heat for 5 to 10 minutes until it is fragrant and some of the beads are lightly browned. Remove the millet from the pan and set aside.

Heat the oil in the same pan over medium-high heat. Add the onion, cumin, coriander and cinnamon and cook for about 5 minutes until the onion is lightly browned. Add the toasted millet, raisins, salt and water and bring to a boil. Reduce the heat and simmer, covered, for 16 or 17 minutes until the millet is tender but still has texture, and the water has been absorbed. Stir in the toasted almonds and parsley and season to taste with salt and pepper. Serve at once.
