Cod with White Wine, Zucchini and Tomatoes

4 (6-ounce) cod fillets
4 tablespoons dry white wine
4 teaspoons lemon juice
4 tablespoons butter or margarine
1 small zucchini, thinly sliced
2 plum tomatoes, chopped
1/2 teaspoon dried thyme
salt
freshly ground pepper




Tear off four pieces of plastic wrap, each large enough to wrap around one fish fillet. Put one fillet in the center of each piece of plastic. Add 1 tablespoon of wine, 1 teaspoon of lemon juice, 1 tablespoon of butter and a fourth of the zucchini and tomatoes to each fillet. Sprinkle each with a little thyme and season with salt and pepper to taste.

Wrap the plastic around each fillet to form a sealed package. Put the packages in the microwave in a single layer. Cook on High (100 percent) for 9 to 11 minutes. Let stand for 2 to 3 minutes before serving.
