Melted Cheese and Ham Toasts
These elegant sandwiches make a delicious, but easy appetizer.

1/2 cup grated Gruyere cheese
1/2 cup grated Parmesan cheese
1 egg, separated
3 tablespoons milk
1 tablespoon brandy, optional
8 slices French bread, 1/2-inch thick, crusts removed
4 thin slices ham, preferably prosciutto, cut in half
Sprigs of parsley, or watercress, for garnish

Heat the broiler.

Combine the cheese in a bowl. Add the milk, egg yolk and brandy, if used, and mix well.

Place the bread slices under the broiler and toast on one side.

Beat the egg white until stiff but not dry, and fold it carefully into the cheese mixture.

Place a piece of ham on the untoasted side of each bread slice. Top with the cheese mixture, spread to within 1/2 inch of the edge.

Broil the toasts until the cheese is melted and golden brown. Serve immediately, garnished with the parsley or watercress.
