Crunchy Spinach Dip

1 (8-ounce) package cream cheese, softened
3/4 cup plain lowfat yogurt
1 (8-ounce) can water chestnuts, coarsely chopped
1/4 cup cucumber, peeled, seeds removed and chopped into small pieces
1 tablespoon chopped chives
1 tablespoon lemon juice
1 small clove garlic, finely chopped
1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry

Combine the cream cheese, yogurt, water chestnuts, cucumber, chives, lemon juice and garlic in a bowl and mix well.

Add the spinach and stir to combine. Cover and refrigerate for 4 hours to develop the flavors. Serve with fresh vegetables such as celery, cherry tomatoes, carrots, broccoli and cauliflower or with crackers.
