Irish potatoes

Peel and dice potatoes. Parboil. Mix flour, one portion of flour to two portions of water, adjust, if required for proper consistancy. Add seasonings to batter, stirring to mix well. Dip potatoes in batter, ensuring they are well coated. Deep fry until golden brown. (Caution: potatoes retain heat for an extended period). Additional seasonings or spice(s) should be mixed into batter prior to coating potatoes.

Variations: We have used Italian seasoning, have also tried BBQ sauce. Other variations might include ranch dressing, hot sauce, garlic or garlic salt. Haven't tried it yet, but substitute sweet potatoes and add cinnamon sugar to batter.

Peeled, diced parboiled potatoes, dipped in flour and water batter, seasoned with salt, pepper and paparika to taste, deep fried until golden brown. SEE NOTES:
