Bok Choy Beef Stir Fry

1/2 cup teriyaki sauce
3 teaspoons sherry, (or substitute white grape juice with splash of vinegar)
3/4 teaspoon sugar
3 tablespoons Vegetable Oil, divided
1 1/2 pounds round steak, cut into strips
1 large onion, chopped into large chunks
1 large bok choy, sliced thinly
8 ounces fresh mushrooms, sliced
3/4 cup toasted sliced almonds

Prepare sauce by combining teriyaki, sherry and sugar in a small bowl.

In a skillet over medium-high heat, heat half the oil and stir fry the
meat until browned.

Remove meat from skillet and set aside, keeping warm.

Add remaining oil to skillet and stir fry onion and bok choy for about 2
or 3 minutes. Stir in meat and teriyaki sauce mix. Cook for about
another 2 or 3 minutes. Then add snow peas and mushrooms and stir fry
this for another 3 minutes or so.

Top with almonds and serve.

SERVING SUGGESTIONS: Brown rice and baked acorn squash.

VEGETARIANS: Skip the meat and use tempeh strips instead.
