Easy Vegetable Fried Rice

1 beaten egg
3 T. soy sauce
3 T. water
1 T. cooking oil
1/8 tsp. Pepper
1/2 can (7.5 oz.) peas and carrots
1/2 cup chopped onion
2 cups chilled cooked rice, (I use instant)

Combine egg, soy sauce, water and pepper. Set aside.
Pour cooking oil into skillet or wok. (Add more oil as necessary during cooking.) Preheat over medium-high heat. Add onions; stir fry for 3 to 4 minutes or until crisp-tender. Add peas and carrots for 2 minutes. Then stir in rice. Drizzle in egg mixture over rice, stirring constantly. Cook and stir for 6 to 8 minutes or until mixture is heated through. Serve immediately. Makes about 4 cups (4 side-dish servings).
