2/3 cup olive oil
1/3 cup red wine vinegar
1 clove garlic, minced
3 T. sugar
2 T plus 1/2 cup Parmesan cheese, grated
2 bell peppers, sliced
cherry tomatoes
black olives, sliced
green onions, sliced
16 ounces rotini, cooked

Cool rotini to room temperature. Prepare vinegrette with first five ingredients, mix well. Stir in whole cherry tomatoes, sliced green onions, diced peppers, black olives and 1/2 cup parmesan. Coat with vinegrette. Mix well and refrigerate one hour before serving.
