Mushroom and Barley Casserole
This hearty side dish can also double as a main course. |

4 tablespoons butter or margarine
|
1/2 cup onions, finely chopped
|
1 tablespoon shallots, finely chopped
|
1 pound fresh mushrooms, sliced
|
1 cup quick-cooking barley
|
1 teaspoon dried basil, crumbled
|
1/4 teaspoon salt
|
freshly ground pepper
|

Combine the butter, onions and shallots in a 3-quart, microwave-safe casserole. Cover and microwave on High (100 percent) for 4 to 5 minutes, until the onion is softened, stirring once.
Stir in the remaining ingredients. Cover and microwave on High (100 percent) for 5 to 6 minutes. Microwave on Low (20 percent) for 9 to 10 minutes, stirring once during the cooking time. Let the casserole stand, covered, for 5 minutes before serving.
