Apres Ski Turkey Stew
A great meal for those cold winter days.
Serves: 4
Prep Time: 10 minutes
Cook Time: 30 minutes


1 1/2 pounds turkey thighs, cut into 1-inch cubes, skinned, boned
1 tablespoon Crisco® Vegetable Oil
1 cup tomato, peeled and cut into chunks
1 cup green pepper, thinly sliced
1 clove garlic, minced
2 tablespoons lemon juice
1 teaspoon Italian seasoning
salt, to taste
pepper, to taste
2 1/2 teaspoons cornstarch
3 tablespoons cold water

In 3-quart saucepan, over medium-high heat, saute turkey in oil until all sides are browned.

Add tomato, green pepper, garlic, lemon juice, seasonings, salt and pepper. Cover, reduce heat to low and simmer about 12 minutes or until turkey is done.

In small bowl, mix cornstarch and cold water. Stir into hot turkey mixture and cook until thickened.

Serve over rice, if desired.
