Vegetable Sandwich
A side of salsa and corn chips add pow to these pitas.

2 tablespoons plain yogurt
1/4 teaspoon dried dill
1/2 cup fresh spinach, washed and dried
2 tablespoons carrots, shredded
2 tablespoons onion, chopped
1 pinch salt
1 pinch fresh ground black pepper
1 pita bread
2 slices tomato

In a small container mix the following ingredients; plain yogurt, dried dill weed, chopped spinach leaves, shredded carrots and chopped onions.Add pinch of salt and pepper to taste.

With a sharp knife, cut the pita pocket in even halves.Stuff the pita with vegetable mixture.

Insert tomato slices into the pita.Serve immediately or chill until served.
