Date Nut Bread

2 cups dates
1 1/2 cups boiling water
2 teaspoons baking soda
1/2 cup butter
1 1/2 cups sugar
2 eggs, beaten
pinch salt
1 teaspoon vanilla
3 cups flour
1 cup chopped nuts




Preheat oven to 325 degrees F. Chop dates and add boiling water and baking soda. Let stand until cool. Add butter, sugar, and eggs. Mix well. Stir in salt, vanilla, flour, and nuts. Pour into greased and floured pans. Bake for 1 hour. Cool. Remove from pans and wrap in foil. Loaves keep well in the refrigerator or freezer. Best if made the day before.
