Mexican Scrambled Eggs

1/4 cup onion, finely chopped
1/4 cup green pepper, finely chopped
2 tablespoons bacon drippings
4 eggs, beaten
Salt and pepper
1 tomato, peeled, chopped and drained
hot sauce, Mexican, optional

Saute onion and pepper in bacon drippings, until tender. Pour off most of the grease. (Do not add milk or cream to eggs.) Add eggs, salt and pepper to the skillet, and cook, stirring, until eggs begin to set. Add tomato, and cook a little more, until eggs are firm. If desired, top with few dashes hot Mexican sauce.
