Chili Con Queso
Try this tasty chili dip for a party.

1 large onion, finely chopped
1 tablespoon bacon drippings
1 can (1 pound) tomatoes
Juice from tomatoes
1 can (4 ounces) whole green chilies
1 teaspoon salt
Several dashes pepper
1 pound processed American cheese, grated




Saute onion in bacon drippings until soft but not brown. Drain tomatoes, reserving juice. Coarsely chop tomatoes and chiles; add to onion. Add salt and pepper. Simmer slowly about 15 minutes. Add cheese and stir over low heat until melted. Thin to desired consistency by adding reserved tomato juice, a tablespoon at a time. Serve over hot, crisp tortillas as a side dish with Mexican food; or, serve from chafing dish as a dip with Doritos or corn chips. Freezes well.
