2 cups cherries, or blueberries, or cranberries
1 1/4 cups sugar
3/4 cup white vinegar, distilled
1/4 cup celery, chopped
1/4 cup fresh ginger, minced
6 tablespoons apple juice
3 tablespoons lemon juice
1/2 teaspoon red pepper flakes, crushed




Combine berries, sugar, vinegar, celery, ginger, juices, and red pepper flakes in a large saucepan over medium heat, stirring until sugar dissolves. Continue to cook 8 to 10 minutes, stirring frequently. Allow to cool to room temperature. Cover and refrigerate.
