12-16 doves
1/2 cup onions, chopped
1/2 cups celery, chopped
1 package (8 ounces) cornbread stuffing
1 cup beef consomme
1 cup chicken broth

Remove wings from birds leaving only beasts and legs. Saute onion and celery in butter. Add cornbread stuffing and enough consomme to moisten well. Fill cavity of each dove with stuffing. Plce stuffed birds breast side up in pan or baking dish. Add remianng consomme and chicken broth to the pan, partially covering birds. Cook covered on top of the stove or in a 350 degree oven for about 2 hours, or until birds are tender. Preparations, except for cooking, may be done the day before serving.
