Grilled Mushrooms and Ham Skewers

1 pound fresh white mushrooms
1/3 cup extra virgin olive oil
1/3 cup red wine vinegar
3 ounces smoked ham, sliced, cut in 1 inch strips
1 medium red pepper, cut in 1 inch strips
16 fresh basil leaves
to taste salt and pepper
2 tablespoons parsley, chopped




Preheat grill or broiler. With small brush clean mushrooms; set aside. In small bowl, combine oil and vinegar; set aside. On 4 large or 8 smaller skewers, alternately thread mushrooms, ham or bacon, pepper and basil leaves. Brush generously with oil-vinegar mixture; sprinkle with salt and pepper. Grill or broil 4 to 5 inches from heat source until mushrooms are golden, turning occasionally, about 6 to 7 minutes. Place skewers on platter, brush with any remaining oil-vinegar mixture. Sprinkle with parsley. Serve over rice, if desired.
