Knock-Out-the-Fat-Tacos
Reduced fat tacos with all the taste. It doesn't get much better than this.

1 pound ground chicken, skinless (could be replaced by turkey)
1/2 cup onion, minced
1/2 cup bell pepper, minced (green or red)
1 teaspoon chili powder
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/4 teaspoon paprika
1/4 teaspoon freshly ground black pepper
1 garlic clove, minced
3-4 tablespoons taco sauce, (optional)
12 taco shells, (or corn tortillas)
cilantro
lettuce, shredded
chopped tomatoes
onion, chopped
Shredded Cheddar cheese
salsa
4 tablespoons nonfat sour cream
4 tablespoons plain nonfat yogurt
2 tablespoons fresh cilantro, chopped




To make the tacos, place the ground chicken or turkey, onion, bell pepper, chili powder, oregano, cumin, paprika, pepper, and garlic in a medium bowl, and mix well until all the ingredients are well combined.

To make the sour cream sauce, place all the ingredients in a small bowl, mix well, and chill.

Prepare the electric grilling machine for cooking. (Taco meat cannot be cooked on an outdoor grill.)

Put the ground chicken or turkey mixture on a hot grilling machine and cook for about 3 minutes, or until no pink remains and the juices run clear. Put the mixture in a medium-size bowl, add the taco sauce, if using, and mix well.

Place 2 taco shells or tortillas on each plate, and allow family and guests to assemble their own tacos. Top with your choice of Cilantro-Sour Cream Sauce, lettuce, tomatoes, onions, cheese, or salsa.




Notes:
Ingredients #1-11 are for the tacos. Ingredients #12-17 are topping options. Ingredients #18-20 are for the cilantro-sour cream sauce.
