Strawberry Summer Salad
The dressing on this salad is the best! Mix the strawberries with whatever other fruit is in season for the freshest salad you can make.

1 pint basket fresh California strawberries, stemmed and halved
1 teaspoon finely chopped fresh mint, or 1/2 teaspoon dried mint
1/2 teaspoon honey
1/2 cup light sour cream
lettuce leaves
2 cups assorted fresh fruit, (blueberries, sliced peaches, plums, kiwifruit, oranges)

To make the strawberry dressing, puree about 1/2 cup of the strawberries in a blender or food processor to make about 1/4 cup of puree. Adjust the amount as necessary. Reserve the remaining strawberries.

In a bowl, stir together the puree, mint, honey, and sour cream until blended. Use immediately or cover and refrigerate for 2 to 3 hours.

To assemble salad, line individual salad plates with lettuce. Arrange the reserved strawberries with other fruits on top of the lettuce. Spoon the dressing over the fruit.
