Honey Baked Leg of Lamb

1/2 cup dry white wine
1/2 cup onion, finely chopped
1/2 cup fresh mint, chopped
1/3 cup honey
2 tablespoon lemon peel, grated
2 tablespoons lemon juice
1 teaspoon salt
1/4 teaspoon pepper
4 pounds leg of lamb, trimmed, rolled and tied




For marinade, combine wine, onion, mint, honey, lemon peel, lemon juice, salt and pepper; mix well. Place lamb roast in a bowl; pour marinade over lamb. Cover and refrigerate 12-24 hours, turning occasionally. Remove from marinade, reserving marinade. Place roast on a rack in a roasting pan. Roast in a 325-degree oven for about 1 1/2 hours or until internal temperature reaches 145-150 degrees. remove from oven; cover loosely with foil for 15 minutes (temperature will rise). Meanwhile, place reserved marinade in a blender; blend until nearly smooth. In a small saucepan, bring marinade to boiling. Reduce heat and simmer 5 minutes. Slice lamb and serve with sauce.
