Tortilla Roll-Ups

1/2 cup ranch salad dressing
2 tablespoons salsa, mild, chunky
1 fifteen-ounce can black beans, drained
1 eight-ounce can canned corn, drained
2 onions, thinly sliced
1 tablespoon cilantro, finely chopped
8 6 inch flour tortillas
4 ounces jalapeno cheese, shredded or cut into strips (about 1 cup)
1 avocado, peeled, pitted, and cut into 16 thin slices
2 plum tomatoes, finely chopped (about 1/2 cup)




Mix ranch dressing and salsa. Spread on tortilla. Top with beans, corn, onions, cilantro, cheese, avocado and tomatoes; roll up. Wrap each tortilla in plastic wrap and refrigerate. Variation: For hot roll-ups; prepare as directed. Wrap each tortilla in paper towel. Microwave each tortilla on HIGH 1 minute to 1 minute 15 seconds or until thoroughly heated.
