Confetti Beef Tacos

1 pound ground beef
2 teaspoons chili powder
One 11-ounce can whole kernel corn, drained
1 cup chunky salsa, prepared mild or medium
One 12-ounce package taco shells, warmed
3/4 cup shredded Monterey Jack cheese
1 cup thinly sliced lettuce
1/2 cup sliced ripe olives
1 cup chopped tomatoes




In a large nonstick skillet, brown the ground beef over medium heat for 8 to 10 minutes or until no longer pink. Break the meat into pieces as it cooks. Pour off the drippings.

Season the meat with chili powder and 1/2 teaspoon salt. Stir in the corn and salsa and heat through.

Spoon approximately 1/3 cup of the beef mixture into each taco shell. Top as desired with cheese, lettuce, and tomatoes.
