Oatmeal Date Muffins

1 cup all-purpose flour
1 cup quick-cooking oatmeal
1/4 cup dark brown sugar, packed
2 teaspoons baking powder
1 teaspoon salt
1/2 cup chopped dates
1 cup milk
1 egg, lightly beaten
3 tablespoons butter, melted




Position a rack in the upper third of the oven. Heat the oven to 400 degrees. Butter 9 muffin cups.

Combine the flour, oatmeal, sugar, baking powder, salt and dates in a bowl. Combine the milk, egg and butter and stir into the dry ingredients until just combined. Do not overmix.

Fill the muffin cups about two-thirds full. Bake for 20 minutes or until risen and lightly brown.
