Grilled Portobella Mushrooms
A great side dish to serve alongside any meat.

4 large (1 1/4 pounds) portabella mushrooms
2 tablespoons extra virgin olive oil
1 teaspoon thyme
salt and pepper, to taste




Gently pull away the stems from the mushrooms. Cut the stems in half lengthwise but leave the cap whole. Thread the mushrooms on skewers.

Combine the olive oil and thyme and brush onto the mushroom. Grill small mushrooms about 4 inches from the coals, about 5 minutes on each side. Grill large mushrooms about 7 inches from the coals, about 12 to 15 minutes on each side. Brush the mushrooms with the olive oil mixture while grilling. The mushrooms are done when they feel soft to the touch.
