Braised Onions with Herbs
Braised onion make an excellent side dish during the cold winter months because they are nourishing and filling.

butter or margarine
12 small onions, (about 1 1/2 pounds), blanched and peeled
1/4 cup beef broth
2 teaspoons garlic, finely chopped
2 teaspoons dried rosemary
1 bay leaf
salt
freshly ground pepper




Heat the oven to 350 degrees.

Put the butter in a shallow flameproof dish, about 8 inches in diameter, over medium heat. When the butter starts to brown, add the onions and cook for 3 to 4 minutes, stirring frequently, until the butter is nut brown and onions start to darken.

Stir in the remaining ingredients and cover the dish. Bake in the oven for 30 minutes, until the onions resist only slightly when pierced with a skewer or knife. Remove the bay leaf before serving.
