Scrambled Eggs with Fresh Herbs and Parmesan
Adding fresh herbs and freshly grated Parmesan cheese turns these eggs into a super dish.

8 eggs
3 tablespoons lowfat milk
1 tablespoon parsley, finely chopped
1 tablespoon chives, finely chopped
1 teaspoon fresh thyme
2 tablespoons butter or margarine
1/4 cup Grated Parmesan cheese
salt
freshly ground pepper




Combine the eggs with the remaining ingredients except the butter and cheese.

Melt the butter in a large skillet over moderate heat. Add the eggs. Fold the eggs over and over with a fork until soft, moist curds are formed.

Fold in the cheese and serve immediatelv. (The heat of the eggs will melt the cheese.)
