1 cup grilled chicken breast, sliced into 1/2-inch strips
3/4 cup mild chili pepper, thinly sliced
3/4 cup red onion, thinly sliced
3/4 cup tomato, diced
3/4 cup kidney beans, cooked
3/4 cup jicama, diced*
1 tablespoon fresh cilantro, minced
1 cup creamy ranch salad dressing
1 tablespoon ketchup
dash salt
dash hot sauce
fresh lime juice, from one lime
sprigs cilantro, for garnish

In large bowl, combine chicken, mild chili pepper, red onion, tomato, beans, jicama and minced cilantro; add lime juice and toss to mix thoroughly.

In a small bowl, mix together creamy ranch salad dressing, catsup, salt and hot sauce. Pour 1/2 cup dressing over salad ingredients, tossing to coat thoroughly. If desired, garnish with cilantro. Reserve remaining dressing for another meal.

*can be found in most produce departments, looks like a large yellow turnip.
