Tomato-Herb Spaghetti

1/4 cup extra virgin olive oil
2/3 cup onion, minced
3 tablespoons garlic, minced
16 plum tomatoes, cut into 1/4-inch dice
1/4 cup dry red wine
3 tablespoons oregano, minced, fresh
4 teaspoons salt
1/2 cup tomato paste
2/3 cup basil, minced
1 pound spaghetti
1/2 teaspoon black pepper
1/4 cup basil, finely slivered, fresh




Cook the olive oil, onion and garlic in a saucepan over medium heat until the onions turn translucent, 3 to 5 minutes.

Stir in the tomatoes, wine, 2/3 cup basil, oregano, salt and pepper. Bring to a simmer, then reduce the heat and cook, stirring occasionally, until thick, about 20 minutes. Stir in the tomato paste and cook for about 10 minutes more.

Meanwhile, bring a large pot of water to a rapid boil. Stir the salt, pepper, and 1/4 cup very finely slivered basil into the hot Marinara Sauce. Add the pasta and cook until al dente, 8 to 9 minutes.

Drain the spaghetti, toss it with the sauce, and serve.
