Homemade Focaccio
Baking bread is the fun way to get the children involved in the kitchen - and keep them out of mischief! This focaccia id full of flavour and great for picnics

2 tsp dried yeast
Blank 00g(1lb 2oz) strong white bread flour
3 tbsp olive oil, plus extra for drizzing
5-6 cherry tomatoes, halved
1 small onion, thinly sliced and fried in 1tbsp vegetable oil until caramelised
Sprigs fresh rosemary, or thyme
Salt and freshly ground black pepper




1. Put the yeast in a bow and pour over 150ml(1/4pt)lukewarm water. Leave for 10-15 mins until the yeast dissolves and starts to froth.
2. Sift the flour and 1.1/2tsp salt into a large bowl, make a well in the centre and add the yeast, oil and 150ml(1/4pt) lukewarm water. Mix to a soft dough, then turn out onto a floured surface and knead for 10mins.
3. Transfer to an oiled bowl, cover with cling film or a clean tea towel and leave in a warm place for up to 2 hrs until doubled in size(or place in the fridge overnight.
4. Turn the dough onto a floured surface and knead gently, then roll out to 25cm (10in) diameter. Place on an oiled bakinf tray, cover with oilded polythene(or put inside a clean, oiled plastic bag) and leave for 30mins in a warm place. If you`re filling the bread, dived the dough in half at this stage. Roll out both portions to the same size, put on a baking tray, add the filling and top with the other piece of dough, sealing the edges with water.
5. Preheat the oven to 200C/400F/Gas mark 6. Puch your fingers into the dough to make dinples all over, then press in halved cherry tomatoes, scatter over the onion, sprinkle with salt and pepper and some rosemary or thyme sprigs, then drizzle with olive oil. Cook on the top shelf of the oven for about 40 mins until golden brown.
