Pace® Spicy Sausage and Potato Tostada

1/4 lb. chorizo sausage, casing removed
1 can (14 1/2 ounces) whole peeled tomatoes, cut up and drained
1/2 cup Pace® Picante Sauce
1 can (about 16 ounces) pinto beans, drained
1 cup cubed cooked potato, (about 1 large)
1 tsp. chili powder
Vegetable Oil
8 corn tortillas, (6-inch)
2 cups shredded lettuce
1 cup shredded Monterey Jack cheese




In large saucepan over medium heat, cook chorizo until browned, stirring to separate meat. Pour off fat.

Add tomatoes, picante sauce, beans, potato and chili powder. Cook 10 min.

Meanwhile, in a small skillet over medium-high heat, heat 1 inch of vegetable oil. Add tortillas one at a time and fry until they become crisp. Drain.

Top each tortilla with the chorizo mixture, lettuce and cheese.
