Pressure Cooker Chicken Breasts with Tomatoes

2 tbsps. Vegetable Oil
6 chicken breast halves
1 1/2 cups canned tomatoes
1 cup water
1 tbsp.minced scallion
1 clove garlic, minced
Salt and pepper

1. Heat cooker, add the oil and brown the chicken breasts.
2. Add the tomatoes, water, scallion, garlic, salt and pepper.
3. Close the cover securely and place the regulator on vent pipe.
4. Cook for 8 minutes with pressure regulator rocking slowly.
5. Remove from heat and let the pressure drop of its own accord.
