Sauteed Fennel, Red Bell Pepper & Scallions

1 medium fennel bulb
1 medium red bell pepper, sliced in long thin strips
4 medium scallions
1 tsp. virgin olive oil
1/4 tsp. seasalt
1 tsp. dill weed
1/4 cup vegetable stock




Trim away fennel root and stems from the bulb. Quarter fennel bulb lengthwise, then cut each quarter lengthwise into thirds. Cut pepper and chop scallions.

Just before serving dinner, heat saute pan with oil over medium heat. Saute fennel, pepper, salt and herbs for 2 minutes, stirring occasionally. Add stock and half the scallions. Heat 2 more minutes. Transfer to a serving platter and garnish with remaining scallions.
