Citrus Chicken Stir-Fry

2 tablespoons olive oil
1 medium onion, cut into 1-inch pieces
1 medium green or red bell pepper, cut into 1-inch pieces
1 (10-ounce) package PERDUE® SHORT CUTS® Original Roasted Carved Chicken Breast, sliced
1 (11-ounce) can mandarin oranges, drained, reserving 1/4 cup juice
1 tablespoon firmly packed brown sugar
1/4 teaspoon ground ginger




In 12-inch skillet, heat the oil over medium-high heat. Add the onion and pepper and cook, stirring, for about 5 minutes or until crisp-tender.

Reduce the heat to medium. Stir in the chicken, reserved mandarin orange juice, brown sugar, and ginger. Cover and cook for about 3 minutes or until heated through.

Stir in the oranges and serve with hot cooked rice, if desired.
