Grandma's Pecan Cakes

1 cup butter
1 cup plus 2 tablespoons sugar
4 eggs, separated
1/2 teaspoon cinnamon
Grated rind of 1 orange
4 cups flour
4 teaspoons baking powder
1 1/4 cups Powdered sugar
3 cups pecans, chopped




Cream butter and sugar; add egg yolks, cinnamon and orange rind. Blend in flour and baking powder. On lightly-floured surface, rool out dough 1/4 inch thick. Cut out with a 2-inch round cookie cutter. Place on lightly-greased cookie sheet; set aside. To make meringue topping beat egg whites until stiff; add powdered sugar and pecans. Put about 1/2 teaspoon topping on each cookie and bake at 325° about 10 minutes, until light brown. Makes 6 dozen cookies.
