Swiss Fondue
An excellent appetizer that can start a great meal.

2 cups white wine
1 pound Emmentaler cheese, cubed and shredded
1 pound Gruyere cheese, cubed or shredded
4 cloves garlic, minced
salt, to taste
white pepper, to taste
5 teaspoons cornstarch
1/4 cup kirsch
1 loaf French bread, cut into bite-size pieces




Bring wine almost to a boil. Melt cheeses and add
garlic, salt, pepper, and wine, stirring
constantly. Combine cornstarch and kirsch and add
to cheese. Cok over medium heat 2 minutes more or
until cheese is completely melted and smooth.
When ready to serve, pour into a chafing dish or
fondue pot. Serve with fondue forks and pieces of
bread. Stir often to keep from separating.
Adjust temperature as needed. For vaiety, serve
with apples.
