Sunshine Eggs

4 hard-cooked eggs
2 tablespoons butter
2 tablespoons flour
Salt and pepper
1 cup milk
4 slices Canadian bacon, lightly broiled
4 slices bread, toasted

Crumble egg yolks and set aside; chop whites and set aside. To make cream sauce, melt butter in saucepan over low heat. Mix flour, salt and pepper. Gradually add milk, stirring constantly . Continue to cook and stir until mixture is smooth and thick. Remove from heat. Add chopped egg whites to cream sauce. Place a slice of Canadian bacon on each slice of toast; to with 1/4 cup creamed mixture. Sprinkle crumbled eggs yolks over top.
