8 ounces new potatoes, halved or quartered (about 3 cups)
1 large sweet red bell pepper, cut in 1'' chuncks (about 1 1/2 cups)
1 medium onion, cut in 8 wedges
3 tablespoons olive oil, divided
12 ounces pork tenderloin
8 teaspoons pepper seasoning blend mix
8 ounces fresh white mushrooms, halved if large (about 3 cups)

Preheat oven to 450 degrees F. Coat a 15'' x 12'' roasting pan with 1 tbs. of the oil. Rub pork with 2 tsp. of the pepper seasoning blend; place in prepared pan. In a large bowl, toss mushrooms, potatoes, bell pepper and onion with reamining 2 tbs. oil and the pepper seasoning blend; add to roasting pan in a single layer. Roast, uncovered, stirring vegetables occasionally, until a meat thermometer inserted in the pork registers 160 degreess F. and the vegetables are tender, about 20 minutes. Cut the pork into thin slices. Serve immediately.
