Lemon Yogurt Cookies

3 cups cake flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 1/2 cups sugar
1/2 cup lowfat lemon yogurt
2 large eggs, lightly beaten
1/3 cup vegetable oil
1/2 teaspoon finely grated lemon zest
1 teaspoon fresh lemon juice




Preheat the oven to 375 degrees. Lightly grease 2 baking sheets.

Whisk together the flour, baking soda, baking powder and salt; set aside.

In a large bowl, combine the sugar, yogurt, eggs, oil, lemon zest and lemon juice. Stir until well blended. Add the dry ingredients and stir until the batter is moistened.

Drop by rounded teaspoonfuls, 2 inches apart on the baking sheets. Bake for 9 to 12 minutes or until the edges are lightly brown. Cool for 1 minute before lifting from the baking sheet to a wire rack to cool completely.
