1 1/2 pounds (about 3 onions) yellow onions
1/4 cup water
1 teaspoon garlic, minced
1/2 tablespoon instant beef soup base
1/4 cup light corn syrup
1/4 cup dry sherry or 2 tablespoons dry sherry
4 cups beef stock, skimmed
4 slices (1/4-inch-thick) French bread
1 teaspoon salt
1 teaspoon dried thyme
freshly ground black pepper
2 teaspoons Grated Parmesan cheese




Peel and slice the onions (about 3 cups). Combine the onions and water in a large saucepan and cook over medium-high heat until the liquid starts to steam, 1 to 2 minutes. Cover and cook for about 4 minutes, until the onions are limp and just beginning to brown. Add the garlic and stir just until the mixture begins to give off an aroma, 10 to 15 seconds. Add the soup base and stir a few times, until the onions have darkened a bit. Add the corn syrup and sherry and stir to incorporate. Stir in the beef stock. Bring to a boil, cover, and reduce the heat to maintain a very gentle simmer for 12 minutes. Meanwhile, toast the French bread lightly. Stir the seasonings into the soup. Divide the soup among 4 bowls, float a toasted slice of bread in each, and sprinkle with 1/2 teaspoon Parmesan cheese.
