1 tablespoon cocoa powder
1 cup sugar
3/4 cup evaporated milk
1/4 cup light corn syrup
3 tablespoons butter
2 ounces unsweetened chocolate, finely chopped
Pinch salt
Few drops lemon juice
1 teaspoon vanilla extract

In a medium-sized heavy-bottom saucepan, whisk the cocoa powder, sugar and about one-quarter of the evaporated milk until smooth.
Add the corn syrup, margarine, unsweetened chocolate, salt, lemon juice and the remaining evaporated milk. Insert a candy thermometer in the mixture and bring to the boil over medium heat without stirring.
Cook at medium heat for 3 minutes until the candy thermometer reaches 236 degrees. Remove the sauce from the heat and stir in the vanilla. The sauce will thicken as it cools.
