Banana Nut Bread

8 tablespoons butter or margarine, cut into pieces and softened
3/4 cup packed brown sugar
1 ripe banana, mashed
1 teaspoon lemon juice
2 eggs
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/2 cup chopped pecans or walnuts




Combine the butter and sugar in a mixing bowl. Add the banana, lemon juice and eggs and mix well, using an electric mixer or a large whisk.

Sift together the flour, baking powder, baking soda, salt and nutmeg in another bowl. Combine the mixtures, stirring until the flour is incorporated. Stir in the pecans.

Line an 8-inch square microwave-safe baking dish with wax paper. Pour the batter into the dish and microwave on High (100 percent) for 7 to 9 minutes until a toothpick inserted in the center comes out clean. Rotate the dish a quarter turn every 2 minutes during the cooking time. Remove the bread from the oven and let it rest in the pan for another 5 minutes.

Turn the bread out onto a wire rack and let it cool for 10 minutes. Peel off the wax paper and cut the bread into 16 squares.
