Artichokes with Basil Butter
The soft tender heart, buried in the center of the artichoke, is the best part.

2 artichokes, about 6 ounces each
1 small lemon, cut in half
6 tablespoons butter or margarine
1 teaspoon dried basil, crumbled
1/4 teaspoon garlic, finely chopped
freshly ground pepper




Trim the stems from the artichokes and pull off any tough leaves from the bottom. Cut about an inch off the top of each artichoke and trim the tips of the remaining leaves with scissors.

Rub the cut surfaces of the artichokes with the lemon. Wrap each artichoke in wax paper. Put the artichokes in a shallow microwave safe dish. Microwave on High (100 percent) for 7 to 9 minutes, rotating the dish once. Remove the artichokes from the oven and let stand for 5 minutes.

Meanwhile, combine the butter, basil, garlic and 2 tablespoons of juice from the cut lemon in a small glass bowl. Microwave on High (100 percent) for 1 1/2 to 2 minutes or until the butter has melted. Stir well and season with pepper to taste.

Serve the artichokes with the basil butter on the side.
