Cheese Fondue

1 medium-size clove garlic, halved
1 tablespoon cornstarch
2 cups dry white wine
2 cups coarsely grated Gruyere cheese
2 cups coarsely grated Swiss cheese
1/8 teaspoon ground nutmeg
1/4 teaspoon salt
1/8 teaspoon white pepper
3 tablespoons kirsch, optional
1 loaf French bread, cut into 1-inch cubes




Rub the inside of the fondue pot with the garlic and discard the garlic.

Blend the cornstarch with 2 tablespoons of the wine in a small bowl.

Bring the remaining wine to a boil in the fondue pot. Gradually add the cheese, stirring continuously until melted. When the cheese is bubbling, add the cornstarch mixture and cook for 2 to 3 minutes until the fondue has thickened.

Season with the nutmeg, salt and pepper. Stir in the kirsch. Serve with a basket of the bread cubes and a fondue fork for each person.
