Roasted Onion Ranch Dip
We love this zingy dip anytime, but especially at cookouts.

1/2 cup chopped white onions
1 tablespoon olive oil
2 cups sour cream
1 cup mayonnaise
1/2 cup buttermilk
1 ounce package ranch salad dressing
1/4 cup red bell pepper, minced
1/4 cup Italian parsley, minced
1 tablespoon fresh lemon juice

Preheat oven to 375 degrees F.

Put the onions and oil in a small baking dish and toss to coat. Bake for about 25 minutes, stirring occasionally, until the onions are golden and aromatic. Remove from the oven and let cool.

Whisk together all remaining ingredients in stainless bowl. Stir in the cooled oinons.

Serve right away or cover with plastic wrap and refrigerate for up to 3 days.

Serve with crackers, raw vegetables, onion rings, sandwiches, and hamburgers.
