Easy Meatballs and Tomato Sauce
You won't want to lose this recipe. Serve the meatballs with the sauce, sandwich them in a hard roll, or make them without the sauce and eat them "as is." Kids love 'em!

12 ounces dried pasta, (spaghetti, linguine, etc.)
Tomato Sauce:
1 tablespoon olive oil
1 cup chopped onion
1 medium clove garlic, finely chopped
1 28-ounce can Italian style tomatoes, chopped, with juice
1 16-ounce can tomato sauce
1/4 cup tomato paste
1 small bay leaf
1 teaspoon basil leaves, crushed
1 teaspoon dried dried oregano, crushed
1/2 teaspoon salt
1/8 teaspoon black pepper
Meatballs:
1 pound ground beef
1/2 cup dry Italian bread crumbs
1 large egg, lightly beaten
2 medium cloves garlic, finely chopped
1/2 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons olive oil




To make the tomato sauce, heat the olive oil in a large pan over medium-high heat. Add the onion and garlic and cook for 7 to 10 minutes, stirring occasionally, until the onion softens.

Add the tomatoes and their juice, tomato sauce, tomato paste, bay leave, basil, oregano and salt and pepper. Reduce the heat and simmer, stirring occasionally, for about 30 minutes.

Meanwhile, make the meatballs. Put the beef in a large bowl and soften by mixing with your fingertips. Add the bread crumbs, egg, garlic, salt and pepper and mix with your fingertips until blended.

Roll about 2 tablespoons of meat between your palms into a small ball. Don't roll too tight or the meatballs will be tough. Set aside on a large plate or cutting board. You will have about 18 meatballs.

Heat the oil in large skillet over medium-high heat. Add enough meatballs to fill the pan without crowding. Cook for 4 to 5 minutes, stirring with a wooden spoon, until browned all over.

Lift the meatballs from the pan with a slotted spoon and drain on paper towels. Continuing cooking the remaining meatballs.

Cook the pasta according to the package directions. Drain.

Remove the bay leaf from the sauce. Add the meatballs and simmer for a minute or two to heat through. Spoon the sauce and meatballs over the hot pasta and serve.
