Food Processor Whole Wheat Bread
Make homemade bread for your sandwiches!

1 active dry yeast (package)
1 cup water, warm (115 degrees)
2 tablespoons brown sugar
1 1/2 cups unbleached flour
1 1/2 cups whole wheat flour, (preferably stone ground)
2 tablespoons shortening
1 teaspoon salt




Dissolve yeast in warm water with brown sugar. Combine flours in a mixing bowl. Put 2 cups flour mixture, shortening, and salt in the food processor with the steel blade and process with quick on/off motions until mixture resembles cornmeal. Add ½ cup yeast mixture and process with 4 quick on/off motions. Add remaining yeast mixture and process with 4 quick on/off motions. Add remaining flour mixture, process with 4 quick on/off motions. Let machine run for about 15 seconds or until ball of dough forms. If dough seems sticky (it depends on weather and flour), add 1 to 2 tablespoons unbleached flour. Do not process more than 60 seconds. Place dough in a greased bowl. Grease surface of dough, cover and let rise in a warm place until dough doubles, about 45 to 60 minutes. Punch down and shape into a loaf pan, cover, and let rise until dough has doubled, about 30 to 45 minutes. Bake for 45 minutes or until nicely browned. If bread browns too rapidly, cover loosely with foil for the last 20 minutes. Cool on wire rack.
