Artichoke Hearts Supreme
This is a delicate side dish with game birds, steak or seafood.

1 cup milk
1 cup cream
3 tablespoons flour, instant
3-4 ounces blue cheese
Salt and pepper
paprika
3 cans (1 pound each) artichoke hearts, small




Slowly heat milk and cream; add flour and stirr until thickened. Add cheese, salt, pepper and paprika and continue stirring over low heat until well blended. Drain artichoke hearts; rinse thoroughly to remove brine. Add to cheese sauce. Stir gently to avoild breaking hearts. Simmer. (The longer the artichokes are simmered in the sauce the more subtle the flavor.) This may be prepared in advance and reheated before serving. (Never put over high heat.)
